Since the mid-2000s, AOAC INTERNATIONAL has validated methods for gluten in its method programs and developed standards and guidance to support the validation and evaluation of reliable methods. The content in this standard was developed as the second of two validation guidelines by the AOAC GFA Working Group on Gluten. These standard guidelines are intentionally agnostic, designed to serve the broader scientific and regulatory community. They provide a framework that laboratories, regulators, and industry worldwide can adopt to ensure analytical methods are robust, transparent, and aligned with public health priorities. Specific examples are provided for enzyme-linked immunosorbent assay (ELISA) methods.
